It’s pumpkin season! I was craving oatmeal raisin cookies the other night and made these up on a whim. I also had a can of pumpkin on hand and thought why not! It ended up being a delicious combination. I put a maple glaze on top too to keep up with all the fall flavors.
I made the glaze pink because obviously I have to keep up with my fall pink theme! The maple glaze was so yummy on top. You can find other yummy pumpkin recipes I’ve made here and here. Can you tell I made both of those last year before I decided to brand my entire blog with pink. My little blog was in its beginning stages! They still taste delicious even if they aren’t as pink.
Pink Glazed Pumpkin Oatmeal Raisin Cookies
These cookies were so yummy and soft! The pumpkin really gave them a nice fluffy texture which is my favorite. If I want a hard, crisp cookie then I go with Tate’s. They are the BEST!! If you haven’t tried them then run don’t walk to your local grocery store. You’ll see them in a green bag. You can also add chocolate chips or dried cranberries instead of the raisins if you prefer.
